How you fill your keg depends largely on the type of fermenter you are using. For glass or plastic bottles or kegs without taps, the beer must be poured into kegs. For fermenters with taps, the water can be drained directly into the dip tube. Finally, if you use a pressure fermenter, you can use carbon dioxide to push the beer directly into the keg.

Glass and plastic bottles are very popular fermentation vessels, and filling barrels is very similar to bottling. Beer must be poured into kegs through the lid. For this, the bucket must be depressurized and the lid must be partially removed. To avoid excess oxygen, you can cover any gaps with sterile foil or kitchen roll.

When preparing to siphon, insert the sanitizing hose, preferably in the bottom of the barrel, to avoid splashing and excess oxygen. Start the siphon and watch carefully how much beer goes into the keg.

If the fermenter has a tap, the keg can be filled without opening the lid, reducing the chance of oxidation. You’ll still need to depressurize the keg before you start filling; if the keg is at more pressure than the fermenter, it won’t fill and may release carbon dioxide into the fermenter, messing up the sweeper.

After the pressure is turned off, connect the sanitizing hose to the fermenter tap and the other end to the keg’s beer splitter. This allows the beer to flow through the dip tube into the keg and prevents splashing. Open the fermenter tap and let the beer flow into the keg. If the flow stops, the barrel must be depressurized. The easiest way to do this is to have an open tap or valve on the gas connection, otherwise you can simply tighten the vent valve or partially open the cover if necessary.

This method completely eliminates the risk of oxidation during barrel cleaning. Release most of the pressure in the keg, then connect the hose between the fermenter tap and the beer splitter. Connect the CO2 tank and regulator to the fermenter, set the pressure to about 5 psi, and let the beer flow into the keg.

You will need to reduce the pressure in the barrel from time to time so that the pressure in the fermentation chamber is always higher. The easiest way to do this is to install the valve in the intake of the barrel and leave it partially open during the transfer.

Many people fall into the trap of overfilling the bucket first. This can have disastrous results, especially if beer leaks through the gas port into the CO2 regulator during forced vaporization, effectively damaging the regulator. You can buy gas fittings with check valves to prevent this problem, but it’s best to avoid spills in the first place.

Leave some space in the keg to promote carbonation and prevent beer from escaping through the gas port. An easy way to do this is to weigh the keg as it is filled. One kilogram is roughly equivalent to one liter of beer.

If you’re using a regular barrel, it’s best to stop when you get to around 18 litres. If you don’t have a scale, you can prepare ahead of time by making sure your fermenter is labeled to measure the amount of beer in it. In this way you can easily calculate liters. Alternatively, you can fill the bucket at a slight angle. Use the dip tube to raise the side of the keg about 1-2 cm and connect the short hose to the gas connection, then fill the keg until beer comes out of the hose. If you lay the keg flat, the beer will go under the gas separator, leaving plenty of room.

When the barrel is full, it must be closed. Sealing the keg ensures that the carbon dioxide remains in the beer while it is carbonating and keeps oxygen out. If you’re transferring beer under pressure from a pressure fermenter, the keg should already be closed – you can check that by pressing down on the lid, it won’t move when it’s closed tightly.

If you have to loosen the cover to prep the gear, just put it back in place, sanitize it and install the gasket properly. Before connecting the gas connector, prime the gas tank and set the regulator to approximately 10 psi. This prevents foam from entering the regulator in the event of overfill.

Turn on the gas and, if necessary, replace the lid while constantly watching for gas leaks. Spray sanitizer around the separator and lid without rinsing, and check for leaks (you can’t hear it) — the sanitizer releases carbon dioxide as it bubbles. Finally, use the pressure relief valve to release all the oxygen in the tank. Do this 2-3 times to make sure you’re only consuming beer and CO2.
